Sweet Corn Saute

A simple and healthy recipe featuring fresh local corn, green onion garlic and more. A great side dish for BBQ chicken!

 

INGREDIENTS:

2 Tablespoons Olive Oil

4 Cups of Sweet Corn Kernels

3 Chopped Green Onions

2 Cloves Garlic, Minced

8 Basil Leaves, Chopped

Salt and Pepper to Taste

 

HEALTHY BENEFITS

Corn is eaten in many cultures. Also known as maize, it is from the family Poaceae, a group of flowering plants known as grasses.  The corn cob is the flower.  Corn is a good source of fiber and B vitamins promoting healthy digestion. On its own it is low in fats and calories. You can grill, boil, saute and microwave corn. Skip the butter and salt and try rubbing with lemon or lime and adding fresh chopped herbs.

 

DIRECTIONS:

• Add Olive Oil in a large skillet over medium high heat

• Add the sweet corn, green onions, and Garlic

• Season with Salt and Pepper

• Saute for 4-5 minutes or until kernels are tender, but crisp (do not overcook)

• Add chopped basil, mix to combine and then serve
